`PATCH /shipment/{id}`

Protected. Requires a valid session cookie (credentials: 'include').

Update shipment state or metadata

Updates delivery state (new, delivered, returned) for the shipment. Emits SSE events (shipment, order) so connected clients rerender in real time.
